Once you smell the delicious aroma, it will be hard to resist! After all, what’s better for supper on a brisk and chilly fall evening than a warm, hearty stew, especially if it’s healthy for them and for you?
Preparation time: 30 minutes; cooking time: 2-3 hours.
Ingredients:
2 lbs of lamb stew meat
2 generous lugs of olive oil
2 slices bacon chopped
1 butternut or other seasonal squash, diced into 1 inch cubes.
2 carrots cut in bite size pieces
1 large turnip quartered
2 tomatoes quartered
head of celery coarsely chopped
2 bay leaves
a pinch of nutmeg
3 garlic cloves, crushed and chopped
water to cover
Cut the meat into large cubes, (or alternatively ask the butcher to do this for you).
In a large frying pan, heat the olive oil, add the bacon & lamb and stir until lightly browned. Add the tomatoes, carrots, squash, turnip, celery, garlic, bay leaves and nutmeg.
At this point, you can continue cooking the stew in the pan, or transfer it to a casserole that can go in the oven. Cover with ingredients with water and cook either over a low flame or in the oven at 350F for two hours or more.
Serve for your pet mixed right in with their regular Honest Kitchen diet. Enjoy your portion with some with hearty country bread and red wine – organic if you have it!
Stay healthy & enjoy the change of season!
